Several options are possible when it comes to the isolation of your evaporator. 

We have 1-1/4" and 2" thick bricks, the ceramic wool sold by the foot, the vermiculite is sold by the bag, the insulation ribbon in different varieties of width, and the cement for the brick installation. The insulated between-pan stainless plate used to isolate each of your pans is also available in widths of 1-1/2" to 6".
